🥗 Traditional Turkish Kısır Recipe
Kısır is one of Turkey's most loved traditional dishes. Made with fine bulgur, fresh vegetables, herbs, and a tangy dressing, it's light, healthy, and packed with flavor. Perfect for family dinners, BBQs, or meal prep.
Ingredients
- 2 cups fine bulgur
- 1½ cups hot water
- 2 tbsp tomato paste
- 1 tbsp pepper paste
- 1 small onion, finely chopped
- 3 tomatoes, diced
- 2 cucumbers, diced
- 4 spring onions, sliced
- ½ bunch parsley, chopped
- ¼ cup olive oil
- 3 tbsp pomegranate molasses
- Juice of 1 lemon
- 1 tsp salt
- 1 tsp red pepper flakes
- 1 tsp ground cumin
- Optional: fresh mint, lettuce leaves for serving
Instructions
Step 1
Place the fine bulgur into a large bowl. Pour over the hot water, cover, and let it sit for about 15 minutes until soft.
Step 2
Mix in the tomato paste and pepper paste until evenly combined.
Step 3
Add the onion, tomatoes, cucumbers, spring onions, and parsley.
Step 4
Pour in the olive oil, pomegranate molasses, and fresh lemon juice.
Step 5
Season with salt, cumin, and red pepper flakes. Mix everything thoroughly until well combined.
Step 6
Let the kısır rest for 10 minutes before serving so the flavors blend together.
Serve chilled with crisp lettuce leaves and lemon wedges.
