Traditional Turkish Rice Pudding (Sütlaç) Recipe

🍮 Traditional Turkish Rice Pudding (Sütlaç)

Sütlaç is one of Turkey's most beloved desserts. Made with rice, milk, and sugar, this creamy rice pudding is light, comforting, and enjoyed by all ages. Whether served warm or chilled, it's the perfect homemade dessert for any occasion.


Ingredients

  • 1 cup short-grain rice
  • 2 cups water
  • 1 litre full cream milk
  • 1 cup sugar
  • 2 tbsp corn starch
  • ¼ cup cold milk (to dissolve the corn starch)
  • 1 tsp vanilla extract
  • Ground cinnamon for serving (optional)

Instructions

Step 1

Wash the rice thoroughly. Add it to a saucepan with the water and cook over medium heat until the rice is soft and most of the water has been absorbed.

Step 2

Pour in the milk and bring to a gentle simmer, stirring occasionally.

Step 3

Add the sugar and continue cooking for another 10 minutes.

Step 4

Mix the corn starch with the cold milk until smooth. Slowly pour it into the saucepan while stirring continuously.

Step 5

Cook for another 5–8 minutes until the pudding thickens.

Step 6

Stir in the vanilla extract.

Step 7

Pour the pudding into serving bowls and allow it to cool.

Step 8

Refrigerate for at least 2 hours before serving.

Sprinkle with cinnamon just before serving for an authentic Turkish touch.


Chef's Tip

For an extra traditional flavour, use full cream milk and short-grain rice. If you love the famous bakery-style version, place the filled bowls under a hot grill for a few minutes to create a lightly caramelized top.
